Mastering the Interview: Navigating First Impressions and Leadership Selection

Interviewing is more than just answering questions; it’s about presenting yourself, talking, and listening. When you interview well, the committee doesn’t just hear you; they feel your personality and patience. Good interviewees tailor their messages based on their audience’s reactions.

People often form opinions within the first five minutes of meeting you. Your body language and how you speak significantly affect their judgment. Chefs usually don’t go through many interviews; they often advance through mentors. It’s not just where you’ve worked, but who you’ve worked under that counts.

Interviews at private clubs are tough for chefs. You’re performing for a diverse group, and members may not understand the culinary world. That’s why having a recruiter helps. They can explain the chef’s background and clarify any misconceptions about the culinary industry.

The best interview committees are carefully chosen, not just made up of volunteers. These members understand the club’s goals, even if they’re not regular diners. But even self-proclaimed “foodies” on the committee might not be as adventurous or knowledgeable as they claim.

Interviews can go off track due to preconceived ideas about what a club chef should be, often based on the committee’s varied backgrounds. After the interview, chefs face a tasting round, cooking in an unfamiliar kitchen for strangers. These tastings are crucial but just one part of the evaluation.

Based on observing hundreds of chef interviews over the past year, here are some key tips:

  1. Arrive on time, as you’d expect from others.
  2. Dress professionally, no matter the club’s dress code. Follow Escoffier’s example: he dressed formally before changing into his chef’s attire.
  3. Remember, you’re there for the club’s brand, not your personal promotion. Keep everything, from your appearance to your behavior, professional.
  4. Speak with a steady, respectful tone. Take your time to show you care about the members’ concerns.
  5. Understand who you’re talking to; research the committee members’ backgrounds.
  6. Stay on topic with your answers, and don’t ramble.
  7. Don’t offer information they didn’t ask for; you might not have time to explain.
  8. Talk positively about past workplaces; it reflects well on you.
  9. Use light, appropriate humor. It shows the human side behind the chef’s apron.
  10. Avoid industry jargon. Keep your language clear to everyone.

Tough questions will come up. Handle them gracefully:

  1. Don’t dwell on past negative experiences. Stay professional.
  2. If you’ve been let go before, be honest, but focus on what you learned.
  3. If asked how long you plan to stay, show you’re committed as long as needed.
  4. Take care when leaving your current job. Good clubs will respect that.
  5. Be honest about why you’re moving on. It shows integrity in your decision-making.

Remember, communication isn’t just about what you say. It’s how you say it and your body language. Like a memorable meal, it’s not just the taste; it’s how you feel while experiencing it. That’s what leaves a lasting impression.

Len has been directing, teaching, and coaching at well-respected country clubs throughout North America for more than 35 years and is regarded as one of the country’s leading racquet directors and managers. From 1998 – 2019 Len served as the director of racquets at the New Canaan Field Club in New Canaan, CT, and concurrently at the Isleworth Golf and Country Club in Orlando, FL between 2004 and 2017. Len was also the former director of tennis & fitness at Boca Lago Country Club in Boca Raton, FL from 1990 to 2004. He was formerly the COO of the New Canaan Racquet Club in New Canaan, CT. Len has hired, trained, and worked with hundreds of professionals in his career and is extremely proud that more than 50 of his former assistants are leading prominent clubs in the U.S. and Canada.

Simard was named Professional of the Year three times and twice Player of the Year by the Florida Division of the USPTA. In 2019, Simard was named National Club Manager of the Year by the USPTA. As a player, Len holds 15 national singles and doubles titles in the U.S. and Canada. He has represented Canada in international play for almost three decades in the veteran categories. Simard, a past president of the USPTA Florida Division, has lectured on many industry topics at PTR, USPTA, USTA, TIA, PGA, and CMAA educational forums and conventions for more than 30 years. Len chaired the USTA committee to bring the first ever “Online Certification to become a Racquets Director” to the industry. This certification is now available through the University of Florida, is endorsed by the USTA, and is certified through the PTR and USPTA. It is now the new industry standard in determining qualified directors of racquets.

Harry served on the USPTA FL Board of directors for 12 years including a 3-year term as President of the Division. He was twice named FL Division “Pro of the Year”. His service to the USPTA continued as he then served for 14 years on the USPTA National Board of Directors including a 2-year term as National President. USPTA AwardLAS VEGAS – The United States Professional Tennis Association held its Awards Lunch this past Wednesday during the 2019 USPTA World Conference presented by Havana Bob’s at the Westgate Las Vegas Resort & Casino. Simard (New Canaan, CT), the general manager at New Canaan Racquet Club in Connecticut, was named 2019 Small Facility Manager of the Year.

In 2018, Simard incorporated pro/ams, weekly one-day junior tournaments and mixed doubles socials to increase programming by 300%, leading to a revenue increase of $150,000. He also instituted midterm and final evaluations within the junior program and created a full pickleball program that includes learn-to-play classes, socials and tournaments.

Simard employs a staff of 10 full-time tennis professionals, seven of which are USPTA certified and three that will become USPTA certified, and retrained them to be fully compliant in the USTA 10 and Under protocol. Simard is a USPTA Master Professional and a past president of USPTA Florida.

Robyn Nordin Stowell, Esq. is one of only a handful of attorneys recognized nationally in the hospitality and resort industries for her unique experience in golf course and private club matters. She represents clients throughout the United States, including properties that are recognized as some of the most exclusive in the world.

Working closely with private clubs, golf resorts, non-profit entities, developers, borrowers, lenders, and member groups, Robyn brings her extensive industry experience to bear when developing creative solutions to achieve her client’s goals and resolve their pressing legal issues. She advises clients on club turnovers, equity conversions, the purchase, sale, and financing of golf and resort assets, structuring of member-financed renovation and expansion programs, contract negotiations, and the sale of amenities valued in the tens of millions of dollars.

Robyn helps clubs update their bylaws, joining documents, rules, policies and forms.  She helps clubs ensure that they adopts best practice, incorporate useful provisions and forms, and protect the club.  Robyn is particularly experienced in complex real estate and financial transactions involving multiple sellers and buyers with golf, spa, retail, fitness, clubhouse, and residential community assets. She regularly counsels private clubs on governance and membership issues and advises clients on a wide range of legal issues, including restructuring of club operations and membership offerings, cybersecurity and data privacy, contracts, water, insurance, employment, operations best practices, and settlements involving real estate, golf course and club litigation.

As a national thought leader in the private club and golf resort sector, Robyn is a regular contributing columnist to BoardRoom Magazine, writing on topics that are timely for club operations and governance. She is a frequent presenter at the Club Management Association of America’s (CMAA) Business Management Institute, CMAA Annual World Conference and CMAA Chapter meetings around the country.
